HAKUKO | Founded: 1887 (Meiji 20) with “Moritsuru” as the representative brand which was changed to “Hakuko”.

Morikawa Sake Brewery is located in the southern part of Hiroshima Prefecture, at the eastern foot of Mt. Noro (839m above sea level) in Seto Inland Sea National Park, on the banks of the Noro River, a clear stream where fireflies dance, enabling them to brew Sake in a blessed environment surrounded by rich nature.

The Master Brewer is filled by Morikawa Motoharu, the younger brother of the 7th generation Kuramoto (brewery owner). Although a small sake brewery, Morikawa Shuzo have continued to brew sake for over 100 years since their founding, all the while still preserving the traditional “soft water brewing method” of the Hiroshima chief brewer.

Their most well-known sake is Hakukō, a flavorful brew whose nuanced taste grows more complex with every sip. It won the silver medal in the Sake category of the 2013 International Wine Challenge, and the gold in the same category in 2014.

Sake is usually mashed in three stages, but we add sweet Amazake in a fourth mashing stage to express sweetness and acidity. They are in harmony with the crisp dry body.
